Banfi Cuvee Aurora Brut Alta Langa DOCG Millesimato 2019
COMPOSITION OF THE CUVÉE: Pinot Noir (minimum 70%) and Chardonnay (maximum 30%). All grapes are selected and hand-picked in Piedmonts’ hilltop vineyards located in the provinces of Cuneo, Asti and Alessandria.
PRODUCTION METHOD: The soft pressing of the grapes is followed by static clarification of the must, subjected at a temperature-controlled fermentation, ranging around 17° C. The Cuvée is made at least by the 90% of the wine obtained from this process, and the remaining part comes from the previous year wine, aged in French oak barriques. Secondary fermentation takes place in the bottle according to the Metodo Classico procedure. Aging on the lees is extended at least 40 months. Traditional hand riddling (Remuage) on pupitres and dégorgement à la glace follows. The sugar dosage is Extra Brut, around 4 g/l. Finally an ideal aging in the bottle ends the process.
TASTING NOTES: Color: pale gold color with fine and very persistent perlage. Bouquet: intense and fragrant, with notes of yeast and vanilla. Taste: well-structured, full, slightly acidulous, harmonious, savory with a bitter base. The addition of a percentage of the Cuvée from the previous vintage aged in French oak barriques gives this sparkling wine its characteristics of roundness, structure and longevity. FOOD PAIRINGS Ideal as an aperitif; perfect with oysters and other raw or cooked seafood, it pleasantly accompanies also appetizers and courses based on fish. Particularly suitable in combination with shellfish.
